We did some more investigating. If you view the email header from Outlook Web Access, the TO email address appears correct, it is the email address the sender originally composed the email for.
However if you download/view the email via POP3/IMAP4 in an email client like Windows Mail or Thunderbird, it shows the email address that you selected as "Primary From Address". This is a known bug in Exchange 2007.
We will try to follow up with Microsoft.

The to reported is my @mail2web.com address and not my @originaldomain.com one
